As one that live there (near To tel aviv) I will be happy to assist you in planing your trip with some tips:
First tip: Israel is more than Jeruslam and Eilat and I think you should visit Tel aviv - the hottest city in israel: dont miss Jaffa (Old Tel aviv) with its ancient medditerranean port overviewng the skyrappers of New Tel Aviv and the art galleries...The promennade is also great with lots of sun, fun great restaurants and hotels!
Jerusalem: Dont miss the old ciry (there is a new Synnaguge thats was re-oprened after more than 100 years (Called Ha'Churva)Dont miss the Bablic Zoo, Mamila Shopping blvd ( A lavish shopping expirience near the old city)Yad Va Shem - The Ultimate Shoa (Hollecaust) MuseumFrom Jerusalem you can visit the Dead Sea, Latrun , Mini Israel Park, Motsa - artist village.
Eilat:Coral reef is a must, underwater observatory also (its near the coral reef and the Dolphins reef) Eilat is all a tax free zone so shopping is one of the things there...go and see the lavish hotels there: Harrods, Hilton Queen Of Sheba, The Dan ....
if you want to do a day tours from Jerusalem you can try visit Haifa (the 3rd biggest metroplis of Israel and a Stunning city)
