First, you'll be able to get onboard the ship between 11:30 to 12pm....the cruise lines put 1pm in the brochures and documents to aleviate crowds, but I guarantee if you get there even at 10:30 there will already be people waiting to get checked aboard...
Second, to get from MIA to port of Miami via taxi will cost you around $ 25.00 each way. The cabbies will try and get more from you by saying there is an airport and port tax you have to pay, but that's no longer true. The City of Miami repealled that tax a few years ago...so call the cabbies bluff on this...and if he gives you a hard time, tell him you want his cabbie number and you will call his cab company...the surcharge they'll try to get is something like $7.50.
Third - you'll probably have your bags and such by 8am if you get there at 7am.....that gives you a few hours to kill....and I'm sure you don't want to cart your luggage all over Miami....so relax and grab breakfast at the airport...then maybe go to Bayside Marketplace around 10am or so....by then you could have the taxi take you to the pier so you can drop off your luggage, then have them take you to Bayside which is just over the bridge from the port.

RCI office employees walk from their offices everyday over to Bayside for lunch at one of the many restaurants...it takes about 20 mins to walk....
