For my cruise in December out of FLL I actually booked a 2-night stay at a hotel very close to the port just to get in the mind-set of a vacation and see a little of the area, maybe do some shipspotting. I havent been to FLL for almost 8 years so I am not sure what to do once I get there. Right now I only have 15 'vacation days' saved up.

Johan, these things are really a judgement call, taken on a case-by-case basis. First of all, depending on the itinerary, the ship's captain knows just how long he can delay departure and still make the first port of call without spending too much extra fuel.
On paper, the cruise line would only wait if they have a substantial number of people delayed on flights booked through the cruise line; they're not responsible for someone on their own. But major weather delays affecting everyone in a large area will cause ships to wait regardless, unless the situation is so bad there's no way that flights are going to come down that day at all, then the ship just leaves on schedule.
Sometimes it may only be one city which is socked in, or one flight with a mechanical delay, but if there is a large group on that flight, they could delay sailing, as well.
The bottom line is, it's always adviseable to fly down a day early, if possible, or as early on sailing day as possible. And this is a major reason to purchase trip insurance, also!
