It is a hard choice--I love most of them for various reasons--but I think the ones depicting scenes of life on board are wonderful, like your second French Line advert. Some of the oldest ones in my collection are quite interesting, but they are in black & white and not as striking. Here's one from before World War I-- it appeared in National Geographic in April, 1914--an entirely different world then:

Here's a fascinating 'people' ship advert from March, 1939. It shows a Shirley Temple look-alike gleefully board the Nazi flagship BREMEN, apparently for one of her legendary Midnight sailings. Even though the text says she's sailing Hapag Lloyd, this is definitely the enclosed Promenade of BREMEN :
Maybe 8 or 10 years earlier, this would have been a great trip--she's one of my favorite ships. But by March 1939, sailing under the Swastika must have been quite an uncomfortable adventure!

I have several Moore-Mac, American Export, and Grace Line adverts from the 1930s and 1940s, but very little from the '50s. Here's an American Export advert from 1953:
