Unfortunately, at this time of year with later sunrises and earlier sunsets, many arrivals and departures are in darkness, but at least you can see who's coming and going, and be prepared.

Is it, in Miami, possible to get on the bridge if you do not have a car?
When we come back on the Valor we will stay a few more days in Southbeach. Is it easy to get a cab from the terminal to Southbeach or should we book befor we leave?

The bridge from Miami to Dodge Island has pedestrian walkways, but you really cannot view the ships well from that bridge, unless a ship is in the Turning Basin upon arrival or departure.
If you are referring to the MacArthur Causeway, which runs alongside Government Cut over to the Beaches, that is not really an area you can walk to (especially now with the Tunnel construction going on at Watson Island) but if you're in a car you can stop alongside the roadway quickly and get photos.
Cabs are plentiful from the cruise terminals to all points, so you would not have to book anything in advance.
I guess you can see them very well at South Beach?

Yes, that's an ideal place to see the ships sail in and out of Government Cut--go down to the south end of South Beach, which is were the ships sail past, both early in the morning and late in the afternoon.
