I have not been on Celebrity or Holland America, but have read good things about them.

Crown Princess - pros: great itinerary (Alaska), excellent food and service; cons: dining staff did lose a couple of points due to the busboy incessantly hinting at us to give him a bigger tip so he could send the money to his "starving" family in Indonesia. Maybe it was true, but.....
Nordic Prince - pros: such a pretty little ship - it's a shame it's gone (as the Nordic Prince, that is), outstanding service; cons: little ship - that means bad in rough weather, food was only OK.
Carnival Triumph - pros: a beauty except for a couple of rooms and some things that made it resemble Caesar's in Atlantic City, food was better than expected, dining staff was first class; cons: too crowded, shore excursions poorly organized and timed, amenities missing in bathroom that are usually available on other lines.
