As for excursions, try the butterfly farm with visit to Marigot in St. Maarten. You'll be on an air-conditioned bus instead of those awful pile-em-in taxi vans with no a/c. Marigot is much prettier than Phillipsburg and there are no side walk shop people to hastle you. there is a lovely flea market right on the water with plenty of native arts and crafts.
The food is great and the head waiters will get you whatever you don't see on the menu or whatever you liked from a previous night. They actually served prime rib one lunch at the Horizon Buffet. The Tournedos of Beef, Rack of Lamb and Lobster Tails were excellent. Also, try the passion fruit souffle. Did try the alternate dining rooms because the dining room food was so good. Heard good and not so good about Painted Desert (I heard the fillet mignon is good). I heard very good about Sabatini's. One couple ate there every night and the waiter prepared special dishes. But there was so much Italian food to offer in the dining room and we loved our waiter and table, that we stuck to it and were never disappointed.
